Green Tea

Green tea, like white, oolong and black tea, comes from the Camellia sinensis plant. Green teas are produced by a process that does not include oxidation or fermentation. They are first spread out to air dry or wither and become pliable. Once most of the moisture has evaporated, they are quickly heated which prevents the oxidation process from beginning. Often high-quality green teas are rolled or twisted to create distinctive shapes like the flat leaves of Dragonwell or the small pellets of gunpowder tea. Green teas are subtle and produce a pale cup.
