Oolong Tea

Oolong tea, like white, green and black teas, comes from the Camellia Sinensis plant, and is semi-oxidized. The picked leaves, one bud and 3 leaves, are dried indoors to promote fermentation. The most crucial part in the production process is when to stop fermentation. Once the desired degree of fermentation has been reached, the leaves are rubbed repeatedly to generate good flavor, aroma and texture. Then they are dried. Oolong teas can vary significantly in taste, from near green to almost black, based on the amount of fermentation. Oolong tea has some of the same qualities as green and black teas.
